15-Minute Meal :: Pulled Pork Stuffed Sweet Potatoes

Come Fall I feel like everybody’s schedule gets a little bit busier.  Whether you have kids or are just a busy working professional, this time of year is packed with activities with everything from visiting the pumpkin patch to football games to holiday get-togethers!  I’ll be the first to admit that as I’m juggling playdates, music classes, and swim lessons with these little ones, there are days when it’s dinner time before I know it and I have nothing prepped!  I wanted to share a quick and easy meal solution that I’ve been turning to on those busy days that takes 15 minutes or less!

The secret is really in these 2 little frozen packages — the Farm Rich® Smokehouse Pulled Pork BBQ and the Birds Eye Steamfresh® Teriyaki Broccoli. I can literally take these out of the freezer and within 10-15 minutes, have a healthy flavorful dinner on the table ready to eat!

Usually I try and have a couple sweet potatoes ready — I like to wrap them in foil and put them in the slow cooker on Low for 8-10 hours overnight or first thing in the morning.  But, you can also just pop the sweet potatoes in the microwave after piercing it with a fork a few times and wrapping it in a paper towel.  Usually 7-8 minutes on high and the potatoes will come out steaming and ready to be filled!

I love the Farm Rich® Smokehouse meats as they’re all quality cuts of meat, high in protein, and the ingredients are all things that I can read and pronounce!  The meats are smoked for hours and the pulled pork comes with a bbq sauce that is the perfect balance of sweet and spicy!  It can be prepared in either a conventional oven or microwave — in the microwave it’s just a quick 7-8 minute zap!While the microwave is working its magic, I’ll chop up a couple additional toppings to add into the sweet potatoes but it’s certainly not required!  Usual suspects in our house include green onions, corn, and avocado, but feel free to get creative!  Drizzle a little bit of your favorite bbq sauce on top for a little extra flavor too!

Because I want to make sure the kiddos get their veggies, I’ll add in a side of broccoli.  Both of them love eating their “little trees” and the Birds Eye Steamfresh teriyaki broccoli is absolutely delicious!  The veggies are packed with flavor and I just love that I can just pop the bag into the microwave (no need to transfer to a dish first!) and it’s ready to go in just a few minutes!

This is seriously one of my favorite meals that comes together in no time at all!  It has a healthy balance of protein and veggies and it’s packed with flavor that the whole family loves!
