As a mom to two little ones now, there is a constant demand for my attention all day long and there aren’t any breaks until the day is all done. After I’ve put Dylan to bed and Kennedy is down until her next feeding, I finally unwind and have a little me time. When I was pregnant, I would oftentimes treat myself to a (or two!) scoop of ice cream but now that I’m trying to get back to my pre-pregnancy shape, I’ve gone in search of slightly more nutritious alternatives. I was so excited to stumble upon these new ice-cream inspired yogurts from Müller while shopping at Walmart the other day and this super simple banana yogurt “pudding” recipe has been the perfect treat to satisfy my late-night sweet tooth without still providing me with the healthy probiotics of yogurt!
The Muller yogurts come in four ice-cream inspired flavors: vanilla bean, raspberry chocolate chip, strawberries and cream, and mint chocolate chip. Made with whole milk and loaded with protein (7g), all of the yogurts are free of high-fructose corn syrup, artificial sweeteners / flavors, and preservatives. With less sugar than other yogurts and only 190-210 calories (depending on flavor), these yogurts are just the right amount of wrong and leave my taste buds happy and satisfied! The vanilla bean flavor even had little flecks of actual vanilla bean!
Banana pudding is one of my all-time favorite desserts, and this recipe is super simple to whip up on even the most tiring of nights and is a treat I know you will enjy! All you need are 3 basic ingredients: Müller yogurt in vanilla bean, vanilla wafers, and a banana (cinnamon is optional).
Preparation involves simply layering the ingredients. I use a small ramekin and start by placing about 5 vanilla wafers at the bottom. Then I pour a heaping layer of Muller yogurt and top it with a layer of sliced bananas. Then add another dollop of yogurt on top, crush 2-3 more vanilla wafers and sprinkle some cinnamon for a finishing touch!
Let your “pudding” sit in the fridge for 5 hours to soften up the vanilla wafers, or just eat it right then if you’re impatient like me. Feel free to enjoy a little “me moment” and indulge in this snack that won’t leave you feeling guilty afterwards!
- 2 cartons Muller yogurt in vanilla bean
- 15 vanilla wafers
- 1 banana (ripe but not brown)
- cinnamon (optional)
