It’s time to celebrate summer now that it’s just around the corner! I try to lighten up my everyday eats and drinks and look for combinations that are quick, easy, and refreshing. One of my favorite meals is a Paleo version of the classic chicken salad that I pair with a refreshing glass of peach iced tea. I will easily make a large tub of this salad during my Sunday meal prep and have scoops of it for the rest of the week! This mayo-free version is loaded with flavor and doesn’t leave me feeling heavy afterwards.
There’s also something nostalgic for me about enjoying a glass of iced tea in the summertime. It was something I always remember my family and I enjoying as we would sit out on the patio in the late summer evenings and share stories while watching fireflies. Whenever I’m sitting down for lunch after putting Dylan down for his afternoon nap, a glass of iced tea just seems to give me that moment of calm. While shopping at Walmart the other day, I also discovered that Lipton has a cold brew teabag option available and it’s made my tea preparation so incredibly easy as I never have to boil any water! To add a bit of natural sweetness to my tea, I’ll chop up a peach, puree it in a food processor and stir it on in.

- 2 cups of chicken (I used thighs), cubed
- 1 large ripe avocado, mashed
- 1/2 cup of green Granny Smith apple (I subbed a red Pink Lady which also worked)
- 1/2 cup of red seedless grapes, halved
- 1/4 cup of fresh cilantro, leaves only finely chopped
- 1 lime, juiced
- 2 T walnuts, chopped
- 1 T olive oil
- salt to taste

Not a fan of avocado and cilantro, but it sure looks good. I think I'll omit the cilantro if I make it.
