We had a unexpectedly rainy weekend and ended up staying in almost all day long. Thank goodness Dylan is really into his Legos right now as they entertained him for a good solid hour and I was able to get some housework done! I felt inspired to do some baking and Adrian has actually been requesting that I make my pumpkin granola for some time now too, so be warned that this recipe is addictingly delicious! I made a triple batch of this yummy goodness this afternoon and will definitely be enjoying this for weeks to come as it’s perfect for going into the fall season!
This granola isn’t too sweet on its own, but you can choose to add in some dried fruits like cranberries, raisons, or dates at the end to kick it up a notch — I made half with cranberries as that’s how Adrian likes his! 🙂 Let me know if you give this recipe a try.
- 4 cups old-fashioned rolled oats (use gluten-free if desired)
- 1 cup pepitas (pumpkin seeds) – raw or roasted although I prefer roasted
- 1/2 cup honey
- 1/2 cup coconut oil
- 1/3 cup pumpkin puree
- 1 Tbsp molasses
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1/4 tsp salt
- 2 cups dried cranberries (optional)
