One of our family traditions every weekend is to start off the morning with pancakes. If you follow me on Snapchat (@cutenlittle1), you’ve probably seen me make these a couple times at least! Dylan absolutely loves eating these pancakes and I love that they’re healthy as well as quick and easy to make!
To make these pancakes, only three basic ingredients are needed: eggs, banana, and oat flour (gluten-free if desired!). I love buying Lone Star Eggs from my local Walmart as it’s another way I can support my state. These eggs are from hens laid right here in Texas, with the same spirit of independence and pride that we’re known for!
- 2 eggs
- 1 banana
- 1/3 cup oat flour — I use Bob’s Red Mill
- 1/2 tsp cinnamon (optional)

These pancakes are quick to make (less than 10 minutes) and I will sometimes even whip them up on weekdays before school. I hope you’ll give them a shot!
