
Since having Dylan, I’ve been doing lots more cooking. One of the items that has quickly become a staple around our house are these spinach muffins. I love having muffins on hand for those busy mornings when I just need to get out the door. These muffins are not only loaded with spinach, but are also gluten free, wheat free, and refined-sugar free. Oat flour is used instead of traditional flour, making these hearty, nutritious, and filling. (If you don’t have oat flour, take rolled out and grind it up in a blender / food processor until it becomes a fine powder.)
Not only do I feel good about putting it into my body, but I can feel good feeding it to Dylan too. Even better is that he absolutely loves this stuff and can almost finish an entire muffin by himself!
Ingredients:
- 1/2 cup + 1 tablespoon unsweetened applesauce
- 1 large egg
- 1 tablespoon vanilla extract
- 1 1/4 cup fresh baby spinach, packed (organic if possible)
- 1/3 cup coconut sugar (I use Madhava Organic Coconut Sugar)
- 2 tablespoons coconut oil
- 1 1/2 cups gluten free oat flour (I use Bob’s Red Mill)
- 1 teaspoon baking powder
- 1/2 heaping teaspoon baking soda
- 1/2 teaspoon salt
- 6 – 8 muffin liner cups (I like the silicone ones)
Now to mix all the wet ingredients: load the applesauce, egg, vanilla, spinach, coconut sugar, and coconut oil all into a food process or blender and blend. I used a Vitamix so that the spinach would be automatically pureed. If you don’t have a blender, use a food processor or hand-cut the spinach into small pieces first before mixing.
In a separate bowl, combine the oat flour, baking powder, baking soda, and salt. If you don’t have oat flour, you can also just take rolled oats and grind them up in a blender / food processor.
Here’s a quick pic of my heaping 1/2 teaspoon of baking soda.
I sifted all my dry ingredients together just cause I find this makes the result a little bit softer and fluffier. Totally optional though.
Then pour the dry ingredients into the wet and mix it all together. Here’s what mine looked like. Nice and green!
Scoop into muffin trays. You’ll want to make sure to use liners since these muffins are gluten free and tend to stick to bakeware more than foods made with normal flour.
Bake for 35-40 minutes until a toothpick inserted in the middle comes out clean. These muffins will look kinda brown-ish on the outside but once you break it open, you’ll see all the green spinach-y goodness.
